San Felipe: San Felipe constitutes the highest elevation point on the Selva Negra estate. For a long time, it remained uncultivated due to its steep slope and its slight isolation from the other plots. A few years ago, Mausi (the estate owner) acquired a small quantity of Geisha seeds; after the initial harvests, she gathered enough planting material to plant approximately 500 trees in the highest part of the sector. Since Geisha is not characterized by high yields, the remainder of the plot is planted with the estate’s finest Caturra; however, the specific harvest that gave rise to this lot was managed completely independently, keeping the Geisha isolated from the moment of picking through to final processing. They paired the Geisha tree with Caturra so that Selva Negra could supply SE Roasters Guild with single-origin samples sourced from various altitudes. During the cupping session, the Guild discovered that the most notable difference was observed in the Caturra variety, particularly when comparing beans grown in low-altitude, mid-mountain, and high-altitude zones. The flavors improved exponentially with altitude; consequently, this variety proved to be the best choice for the highest elevations, where it would be cultivated alongside the Geisha.
